Consider any place where contamination or unsafe conditions may are present to cause side effects from the food being dished up. Design your kitchen to avoid places where food is at the incorrect temp or vulnerable for cross‐contamination. Make the loading dock access as near the walk‐in cooler as you can, for example, and design a specific path to other storage space areas to prevent the meals from coming into connection with anything unnecessarily.
Make another list with equipment you are considering purchasing. Contact a kitchen provider and look at their options. Ask the provider for cut bedding showing the details on substitution equipment. Make sure it is large enough for your anticipated expansion and make be aware of the rises in gas, electricity and ventilation. If you are buying used equipment, you'll need the supplier to call out information on the used equipment over what your existing equipment uses. This must include physical space.
